It’s my husband’s birthday today. Happy birthday, dear! I am so thankful for you & all that you add to my life!

I am usually pretty terrible with getting him gifts. He doesn’t like tech stuff, it’s hard to shop for him for clothes, and all the usual “guy” stuff just doesn’t seem to fit him.

This year, I made him a gift basket with some of his favorite “guy things” and I think it turned out pretty well.

In it is… 2 of his favorite style beers (imported, from a fancy beer store, oh la la), beef jerky, Godiva, a Butterfingers (his favorite candy bar), and some shower gel. Not too shabby!

I also wanted to make him a birthday treat. He’d been asking for cookies for the past few days, which is rare, but I went for it. I usually make him a chocolate cake of sorts for his birthday as he’s huge into chocolately cakey things, but I made these beauties instead.

Chubby Hubby Double Chocolate Cookies

CHUBBY HUBBY DOUBLE CHOCOLATE COOKIES

Ingredients: 

  • 1 cup (or 1 stick) of butter or crisco*
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 1/2 cups flour
  • 3/4 cups unsweetened cocoa powder (extra dark if you can find it)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 12 oz. package of semi-sweet chocolate chunks
  • 1 12 oz. package of dark chocolate chips (Nestle makes some dark ones)

Directions:

Preheat oven to 350.

1. Mix butter/crisco with sugars in a mixer or with a hand beater until fluffy. Add vanilla and then each egg, one at a time.

2. In a separate bowl, add cocoa powder, flour, baking soda, and salt. Mix well before adding to the wet mixture.

3. Mix dry and wet ingredients well before adding the chocolate chunks and chips.

4. Chill dough for at least 30 minutes before baking. This step makes the cookies turn out so much better. If you skip it, cookies are often flat.

Oh and try not to eat all the dough 

5. Scoop tablespoon sized spoonfulls of dough onto a cookie sheet, placing 9 scoops total to give each cookie some room.

6. Bake for 9-11 minutes. I baked mine for 10 and they were perfect. Remove from oven and let sit on the cookie sheet for another minute before moving to a cooling rack.

These are so good warm out of the oven when the chocolate pieces are still gooey. Yum!

* Note about using Crisco: add 1/4 cup of water to the mix as well. I actually made these with crisco because I was out of butter and I couldn’t tell the difference. Although I would usually opt for butter.
